2. Place 1/4" strips of chicken (1lb. of boneless breast) in a plastic bag. Add 2 tbsp. of vegetable oil to bag and coat chicken. Add fajita marinade to bag and coat chicken again.
3. In a large skillet, thoroughly cook marinated chicken. Add sliced onions, and sliced green or red peppers. Cook for an additional 3-5 minutes.
Makes 4, two-fajita, servings.
To prepare omelets for two, crack and whisk 6 eggs. Whisk packet contents with 3/4 to 1 cup milk, add eggs. Mix and pour into warm skillet. Add peppers and onions. Cook and top with cheese.
- For fajitas, simply toss with beef, chicken, pork, seafood or tofu during sauteing. (Adjust to taste, but start with about 4 teaspoons per pound of meat or tofu.)
- Add to guacamole.
- Add to stir-fries. Stir into bean soups, sides, and casseroles.
- Fry with tofu or tempeh strips.
- Sprinkle on Mexican salads.
- Saute peppers and onions; add eggs to scramble. Season with Fajita Seasoning and serve on sub sandwich bread.
